Nymeria's Pupcakes!

These were for my birthday :) 

Let's do it!


The Stuff:


1 ripe banana (mashed)

1/4 organic /vegan peanut butter

1 tablespoon agave (optional)

1 cup unbleached flour

1 teaspoon baking soda

1/4 cup cooking oil

3-4 tablespoons of water (to smooth)



Preheat oven to 350 degrees F. Once batter is stirred, line muffin tin with nonstick/vegan butter and  slowly fill the tins about 1/2 full (they will rise). Cook for about 15-20 minutes (depending on size of muffin tins). 

We had 9 muffins total for my birthday celebration! 


Frosting (optional):

1/2 cup of organic coconut milk

3-5 tablespoons of tapioca starch (dependent on desired thickness)

**Note: Placing this in the freezer for about 5 minutes before coating to give it a less "melty" look**
