Vegan French Toast
If you are anything like me, you are more of a savory than sweet kind of person. Maybe you like avocado toast or potatoes in the morning. Maybe you like a toasted everything bagel with a tofu scramble on the side.
Or maybe, just maybe, sometimes, you like to dabble into the warm goodness of a cinnamon french toast with refreshing papaya on the side.
If you ARE anything like me, you may have been an expert at cooking everything BUT french toast all of your life too. If that is the case, keep reading... I think I finally got it right.
What you need:
6 slices of your favorite bread (the thicker, the better)
3 tablespoons of flour
1 -1 1/4 cup vanilla almond milk
2 1/2 tablespoons crushed flax seed (also can use vegan egg substitute or chia)
1 teaspoon organic cinnamon
1-2 pinches of ground Himalayan Sea Salt
Coconut oil to grease the skillet
Vegan Butter (optional)
Organic Sugar (optional)
How to do it:
Mix together the flour, flax seed, cinnamon, and salt; Mix the vanilla almond milk into the dry goods as well. Line your skillet with coconut oil so that your masterpiece won't stick and place the skillet on a medium-heat burner. Dip your favorite bread into the wet mixture (make sure to cover both sides!). Once dipped, continue to place bread onto skillet. Flip occasionally-- should be about 3-6 minutes on each side. Keep a close eye on the toast, you want to make sure that they are evenly golden brown and not soggy on the inside or burnt!
If desired, spread butter or drizzle agave on your french toast. For mine, I sprinkled a little sugar and cinnamon along with the agave drizzle. On the side, I scooped out my beautiful papaya to look like sherbet!
It was delicious.
